On Friday, February 25th, we celebrated "Flapjack Friday" since we couldn't do "Pancake Tuesday". I have been celebrating this holiday on and off for about 15 years. I started doing it in college, and have had on mulitple occasions between 80-100 people. This year we had 75 people there, including my family. Luckily they weren't all here at the same time. I had said people could stop by between 5:30 and 9:00pm, so the most we probably had at one time was around 40-50. I have no idea how many pancakes I made, but easily over 300. I made Harvest Grain, Pumpkin, blueberry, and plain pancakes and for toppings we had cinnamon syrup, buttermilk syrup, devonshire cream (my fav) blueberry syrup, boysenberry syrup, and plain ol' maple syrup as well. If my house was bigger I would have invited more people, but I had to stop somewhere. Maybe next year I will see if I can do it at the church to hold a bigger crowd. And then maybe my laundry room door will work after Pancake Tuesday next year. :-)
